Colston Bassett stilton mousse w tomato chilli jam, pear purée, celery cress and toasted sourdough

Pan-fried hand dived scallops w pumpkin purée, sobrasada, roasted pistachios and infused honeycomb extra virgin olive oil

Guinea fowl galantine stuffed with smoked pancetta, apricots and grated black truffle served w chicken liver mousse, mushroom purée, golden raisins and a roasted guinea fowl jus

Pan fried 8oz Rib-eye served w baby vegetables, a roasted tomato & rosemary fondue, slow cooked Jacob’s ladder, potato croquette & a beef red wine sauce infused with vanilla pods

Wild mushroom polenta cake w wilted curly kale, gorgonzola beignets, parsley crumbs, figs & a Madeira cream sauce

Sliced turkey breast, cured wild boar ham, goose terrine with sage, onion & apple and a duck liver mousse served w braised red cabbage, roasted vegetables and potatoes
